The olive is a fruit with a very long history, dating back to 5000/3000 years BC: it is a pulpy oily fruit that tends to green or to Purple/black once it has ripened. Only at this stage are the olives treated to produce this very tasty cream.
Cook the pasta (Spaghetti, penne or any other of your choice), season with the cream and add chopped cherry tomatoes, basil or parsley. This cream can also be a fine spread for canapés or for bruschetta toasted bread.
Olives are indicated in diets, to reduce cholesterol, thanks to the high percentage of unsaturated fats and of fibers.
